Vegan Friendly Mixed Case
£50.70The reason that all wines are not vegan or even vegetarian-friendly has to do with how the wine is clarified and a process called ‘fining’. All young wines are hazy and contain tiny molecules such as proteins, tartrates, tannins and phenolics. These are all natural, and in no way harmful. Most wines, if left long enough, will self-stabilize and self-fine. However, traditionally producers have used a variety of aids called ‘fining agents’ to help the process along. Fining agents help precipitate out these haze-inducing molecules. Essentially, the fining agent acts like a magnet – attracting the molecules around it. Traditionally the most commonly used fining agents were casein (a milk protein), albumin (egg whites), gelatin (animal protein) and isinglass (fish bladder protein). These fining agents are known as processing aids. They are not additives to the wine, as they are precipitated out along with the haze molecules.

They view wine as the ability to transform a seemingly ordinary day into something pretty special. On the back of every bottle is their poem, and each hand sketched illustration on the wine label represents a different line of that poem.

Claymore, ‘Blackbird’ Sangiovese 2016
£16.75The ‘Blackbird’ is all about artisan, small batch winemaking. Hand plunged in one tonne open vats with minimal intervention and basket pressed to oak. This ensures that all of the primary fruit flavour from the vineyard is captured and drives what you taste in the mouth is a wonderfully full flavoured and balanced medium weight bright ruby red wine showing elegant, velvety tannins in the mouth with hints of dry and dusty earth. There is a deceptive succulence to this wine, with a mouth coating structure and lingering persistence on the palate; notes almost of strawberry cream element to the fruit profile and licks of fresh Italian leather.
The aromatics are lifted and appealing; fresh cranberries with green olives and lots of those pretty Sangiovese light berry fruits best served with roast pork with fresh fennel salad.
A little bird also told me (excuse the pun!) but the story behind the name Blackbird comes from the song Carissa Major (Claymore’s General Manager) used to sing to her babies to get them to sleep.

£10.95A pure ruby-garnet colour where the taste of wine is rounded, lush, clean, with a good balance, notes of chocolate and anise, with soft sweet tannins. The aroma of wine reveals sweet notes of ripe black fruit, raisins, cherries and red liquorice. This wine should be served with grilled red meats, cheeses and dishes from beans. -
Hugh Hamilton ‘The Mongrel’ Sangiovese Blend 2016
£16.95A decade ago, fresh young reds were rare, and rarely taken seriously. These days they are more common, and critics pay much more attention! Hugh Hamilton are not after attention per se; their aim is to take the best of Sangiovese – always the core of ‘The Mongrel’ – and build on it, in a perfumed, savoury, unchallenging style: fresh, bright and lively!
85% Sangiovese 13.5% Grenache 1.5% Sauvignon Blanc – Sangiovese is a grape that has a lot going for it. Think savoury, meaning it’s great with food; it has a cherry flavour which is a contrast to most other grapes we grow and it holds very good tannin structure. Its natural acidity means it always has an interesting and lively palate. However, if you really want to make this wine ‘sing’ it needs a little touching up with something else and in this vintage, that is a splash of Grenache and Sauvignon Blanc.
With a nose that is a fruity-earthy mix of tar, raspberry, and maple syrup and a palate of supple textured, muscular palate of length and mid-weight. The intense perfume ‘blooms’ across the palate. Crunchy. Shiny polished leather.
The Mongrel is best matched with a simple pasta e polpette (meat-balls) dish with grated parmesan and fresh parsley. In fact any rich, tomato-based dish will be a perfect match!

This Sangiovese Cabernet is a blend of two parcels from two small vineyards in the Willunga foothills area of McLaren Vale. Fermented in open top fermenters, the Cabernet was kept on skins for 10 days, while the Sangiovese remained on skins for 30 days. This allows the tannins to integrate and soften, while still providing length and structure.The parcels were kept separate until final blending prior to bottling.

NOSE
On the nose, the smells of ripe red pulp fruit are followed immediately by spicy tones of liquorice and cinnamon, and with iron and undergrowth.
PALATE
The palate is gritty and powerful, characterized by sophisticated soft shades and a deliciously mentholated and balmy closure. Long finish.
The “San Michele” which gives a fragrance and sensuality at the same time, and capable of showing a truly exemplary concentration. Matured for one year in oak barrels and aged for 21 months in a bottle.
Great with red meat and game.
WINEMAKING
Production is small at 6000 bottles and all grapes are hand harvested.

£14.95We know this wine will age and improve for another 6 years but we were impressed with the integrated tannins which will please some customers who are a little less patient!
In the glass the hue is deep ruby red which will move to garnet the older it gets. The nose is ripe red fruit with vanilla and spice. On the palate the fruits are ripe and bold with a pleasantly intense finish.
