Vegan Friendly Mixed Case
£50.70The reason that all wines are not vegan or even vegetarian-friendly has to do with how the wine is clarified and a process called ‘fining’. All young wines are hazy and contain tiny molecules such as proteins, tartrates, tannins and phenolics. These are all natural, and in no way harmful. Most wines, if left long enough, will self-stabilize and self-fine. However, traditionally producers have used a variety of aids called ‘fining agents’ to help the process along. Fining agents help precipitate out these haze-inducing molecules. Essentially, the fining agent acts like a magnet – attracting the molecules around it. Traditionally the most commonly used fining agents were casein (a milk protein), albumin (egg whites), gelatin (animal protein) and isinglass (fish bladder protein). These fining agents are known as processing aids. They are not additives to the wine, as they are precipitated out along with the haze molecules.

£17.95Hugh Hamilton is the 5th generation of a large wine dynasty and is regarded as the black sheep of the family. His daughter and 6th generation of the family, Mary, continues the legacy, making Hugh Hamilton winery Australia’s oldest wine family.
McLaren Vale is red wine heaven, with an ideal climate for bigger-bodied reds, but, with careful site selection, the region can grow pretty much anything. Merlot can be more difficult than some, with erratic yield and ripening habits; its unpredictability is sufficient reason for calling it ‘The Ratbag’. It certainly has a
character all its own.The Ratbag is always a reminder to Hugh that Merlot is so much more than just a soft red wine. Each year the fruit that grows in their Church Vineyard tenaciously produces the most varietal Merlot I have ever tasted – not only soft, but full of character and class.

NOSE
On the nose, the smells of ripe red pulp fruit are followed immediately by spicy tones of liquorice and cinnamon, and with iron and undergrowth.
PALATE
The palate is gritty and powerful, characterized by sophisticated soft shades and a deliciously mentholated and balmy closure. Long finish.
The “San Michele” which gives a fragrance and sensuality at the same time, and capable of showing a truly exemplary concentration. Matured for one year in oak barrels and aged for 21 months in a bottle.
Great with red meat and game.
WINEMAKING
Production is small at 6000 bottles and all grapes are hand harvested.

£17.95Jim Watts, an eminent professor of surgery, purchased the bare land that is now Fox Creek vineyards with his wife Helen in 1984. A lover of wine, Jim and his four children planted a selection of grape varieties and made their first wine under the Fox Creek label ten years later.
Three decades following Jim and Helen’s vision to plant grapes certainly stopped the critics who mooted the land was not suitable. It is deserving that Jim has a wine named after him. The Jim’s Script is a classic blend of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. The wine is full of black fruit flavours and long elegant tannins. This wine has a vibrant and rich palate with seamless integration between the varietal flavours and tannins, finishing with crunchy acidity and an earthy texture.

£10.95Red berries and vanilla and toasted wood on the nose and just a hint of green pepper. Good entry into the mouth, the feeling of pleasant diffused light tannins on the tongue and the perception of warmth and sweetness given by alcohol. Good length and persistence that leave a pleasant dry mouth that calls for another taste.

Maxwell, ‘Little Demon’, Cabernet Merlot 2013

In 1871 Scottish scientist James Clerk Maxwell (Mark Maxwell’s Great Grandfather) proposed a thought experiment, that involved a hypothetical creature acting as a gatekeeper between two compartments to sort gas molecules according to their speed. At first glance, such a system could potentially create energy from nothing… theoretically impossible given the laws of physics. This hypothetical gatekeeper became known to physicists as Maxwell’s Little Demon, and has stirred debate in the science community for more than a century.
THE WINE
Intense purple colour with a generous nose of vanilla, raspberry and spices.
The palate shows both the persistence and depth of Cabernet, and the smooth influence of Merlot. Light savoury notes of black tea blend with more obvious cherry, mulberry and blackberry. Subtle oak and interlacing soft tannins contribute to the velvety palate and soft finish.
