APPEARANCE

NOSE
Ripe berry and mocha coffee oak aromas and a delicate whiff of mint.
PALATE
Sweet red and black fruits enhanced by the gentle use of Vanillian French oak. Soft cocoa and fine velvety tannins deliver a lingering, moreish finish.
Plucked from the vine in a dry, but not excessively hot vintage, carefully tended by Mike Farmilo and his team, the wine was put through a complex barrelling with new French, and used American oak barriques for a period of 20 months. The result is a wine with excellent cellaring potential, rewarding the patient Cabernet enthusiast.

Nose- A distinctive varietal aroma of dark boysenberry and violets hits you at first but a little patience will reveal deeper characters of earthy forest floor leaves, cooked beetroot and hints of dried herbs.
Palate – Elegance and restraint are keys to this wine. A big mouthful of blackcurrant fruits is backed up by careful oak integration that delivers structure and depth. Savoury tannins are harmonious with the ever-present lashings of wild berries, liquorice and hints of leather and cedar.
General – Cabernet in the Clare Valley is distinct and powerful. It is one of the stronger varieties suited to the growing conditions and terroir of the region. The use of Merlot has a generous and appealing impact on the sometimes edgy and potent characters of Cabernet. They work hand in hand to give balance and richness to the drinker. Distinctly Cabernet with violets, leafy notes and red fruits, this wine is approachable and generous.
Serve With – Claymore’s winemaker Marnie Roberts suggests pancetta wrapped lamb cutlets with olive tapenade served with grilled field mushrooms in sage butter.

The Maxwell Winery is located on the south facing slope of a solid limestone hill in the heart of the McLaren Vale. Next to the winery is a man-made cave, dug in 1916, tunnelled 40 metres into the hill. This is the Lime Cave.
Cabernet Sauvignon for this wine is sourced from vines planted in 1972 above the Lime Cave, on the crest of the estate vineyard. Identified as a Reynella Selection Cabernet vines, the first vines were brought into South Australia over 160 years ago. The estate vines, now into their 4th decade, continue to produce small parcels of remarkable fruit due to the minimal topsoil and solid limestone in which they grow.
Matured in French oak, the abundant mulberry, cassis and violet overtones are well integrated with spice oak. Long grained tannins provide balance and persistence. The elegant Cabernet Sauvignon is a reflection of the unique are of McLaren Vale in which it is grown.

Le Argille Cabernet di Cabernet 2017 *Gift Boxed*
£32.50Cement dipped bottle, wax cap and leather label: we had never seen a bottle like it until we found this truly remarkable Le Argille Cabernet Di Cabernet. Originating from Treviso, Italy, in vineyards surrounded by the river Sile, this strong, serious and unique wine is aged in concrete barrels for two years. This method allows the the winemakers to produce an immaculate wine free from oak interference, so that the flavour comes entirely from the grapes themselves. Its uniqueness is fully preserved along with its warm, refined, and mature taste.
Appearance and Nose
If you can lift the bottle (it really is heavy!), on the pour you’ll release an intense ruby red liquid with garnet highlights. Stick your nose in and you are greeted by a warm, complex, enveloping aroma, with perfume of mature berries especially blueberry, blackberry and wild strawberries. Then a second wave hits you with hints of plum, black cherries and vanilla. But wait.. it still hasn’t finished, now we’re getting light nuances of tobacco, dark chocolate and green pepper.
Palate
It is everything it promises with a warm, elegant, mature, complex and important mouthfeel that reveals soft berries, glorious spicing and just gorgeous supple tannins. The long ageing in cement has preserved all the exquisite particular flavours of the grapes that crescendos to a spectacular mouth warming long finish that demands you take another sip.
Food pairing
Well the good news is it is incredibly versatile and food friendly. It’s excellent with strong meats like game and venison and will pair up wonderfully with meaty stews and hard cheeses.

There is nothing quite like the thrill of seeing the unexpected triumph over the norm – no less spectacular than watching a man in a jumpsuit leap 19 cars on a Harley and stick the landing. What could easily be seen as no more than a publicity stunt is actually a true and death-defying leap into the unknown. It’s not as crazy as you may think, or maybe it is. Either way, it works.
WINEMAKER’S NOTES
“We took a great Cabernet and started to blend in increasing percentages of a very special Sauvignon Blanc and stopped when we liked it best. This is as basic as blending gets. All it required was a willingness to challenge expectations. Highly perfumed Cabernet from the Black Sheep Vineyard has been back blended with textured, wild, barrel fermented Sauvignon Blanc to the benefit of both.”BOUQUET AND PALATE
A heady mix of blackcurrant and Brut 33. Massively perfumed with woodsy spice and forest floor, there is also an exotic sweaty floral lift that lends a compelling depth and complexity. A textural conundrum – firm without overt grip – assertive yet soft. -

Winemaker’s notes, Walter Clappis:
This Sangiovese Cabernet is a blend of two parcels from two small vineyards in the Willunga foothills area of McLaren Vale. Fermented in open top fermenters, the Cabernet was kept on skins for 10 days, while the Sangiovese remained on skins for 30 days. This allows the tannins to integrate and soften, while still providing length and structure.The parcels were kept separate until final blending prior to bottling.
